Luxury hospitality organisation in Italy

The problem this seat exists to solve

The final recommendations should allow leadership to explain why each outlet exists, whom it serves and what resources it requires. Success means a coherent portfolio of experiences that the property can deliver consistently. The advisor should leave realistic economics and testable choices, avoiding assumptions that premium positioning alone will compensate for weak demand, excessive complexity or an operating model that depends on exceptional individual effort.

Start with the role of each outlet

The advisor will assess how food and beverage concepts contribute to a hospitality property's guest proposition and financial performance. The mandate requires distinguishing an outlet's strategic role from its standalone economics and understanding the operating effort needed to maintain quality. It is an advisory engagement, not an appointment to run kitchens or restaurant operations.

Commercial and operating evidence

Review demand by meal period, guest segment and occasion. Examine menu complexity, purchasing, preparation effort, waste and service capacity. Identify whether weak contribution comes from demand, pricing, operating design or an offer that is too broad for the available team.

Assess how resident and external guests use the outlets and how that affects access, service and atmosphere. A concept may support room positioning while still requiring disciplined cost control; equally, a profitable outlet may create operational conflicts that weaken the wider experience. The recommendation must make these interactions visible.

Candidates should demonstrate senior food and beverage or hotel operating experience with financial accountability. They must explain an occasion when simplifying an offer improved both guest experience and economics, or when an apparently efficient change would have undermined the concept. Practical knowledge of service execution is as important as analytical capability.

Options for management

Develop choices for concept positioning, operating hours, menu architecture and service model. Test the consequences for guest satisfaction, staffing, procurement and contribution. Recommend trials that allow managers to learn before committing to substantial fit-out or permanent changes.

Advice should include the management information needed to maintain performance, with attention to stock, yields and controllable labour. Food safety, licensing and other applicable requirements remain with qualified specialists and authorised management. The advisor will not approve suppliers or make staffing decisions.

Before you apply — an advisory engagement

No office of director, and no appointment formalities.

An advisory engagement creates no directorship in Italy. There is no registry filing, no regulator pre-approval, no residency arithmetic and no statutory director liability — which is why it is so often the right first step into a market you do not yet know.

On this brief
Independence
Where the engagement specifies independence from any search that follows, that is a requirement of the engagement rather than a courtesy — an adviser to a board is not a candidate for it.
